The Best Self-Saucing Chocolate Pudding

This is a family recipe that we found in my great-grandmother’s personal cookbook. Before her death, she refused to let us see the recipe or watch her make it. Despite this, she made it all the time, and it has long become a staple in our family. We aren’t sure what her source was or if she developed the recipe herself. It was possibly inspired by a similar recipe in Edmund’s Cookbook, which we found in her belongings. Still, through research, I have found that there are many other similar recipes that were created during WWII when families like hers had to use common non-perishable pantry staples to make food. 


Nonetheless, the pudding is perfect for all kinds of gatherings: Christmas, Birthdays, Sunday night roasts, or perhaps a Graduation dinner. It pairs with everything and is incredibly easy to make!


Ingredients: 


For the Pudding Batter: 

  • 1 cup of self-raising flour

  • ½ cup of milk

  • ¾ cup of castor sugar

  • 30g of melted butter

  • 2tbsp of cocoa powder

  • 1tsp of vanilla essence

For the Sauce: 

  • ¾ cup of brown sugar

  • ¼ of cocoa powder

  • 1 ¾ cup of boiling water


Optional: 

  • Vanilla ice cream 


Method: 

  1. Preheat the oven to 180°C (160°C fan forced)

  2. In a bowl, combine self-raising flour, milk, castor sugar, butter, and cocoa powder in a bowl until it is smooth and reaches a consistency that is slightly thicker than cake. 

  3. Thinly coat the base of a ceramic or metal cake pan and put the batter into it

  4. In a separate bowl, sift the brown sugar and cocoa powder for the sauce. 

  5. Combine until there are no chunks of brown sugar and it has reached a powdery consistency

  6. Pour the powder over the pudding and make sure it is evenly distributed over the top (this can easily be achieved by gently shaking the tin) 

  7. When the oven is ready, pour the boiling water over the powder and pudding batter and place in the oven. 

  8. Bake for 50 minutes at 180°C (160°C fan-forced) until the top is dark brown and bubbly.

  9. Once 50 minutes have passed, or the top is dark brown and bubbly, take out of the oven and serve immediately with ice cream.
